腰果花是一間「無糖」、「無奶」、「少鹽」、「使用好油」、「低溫烹調」的餐廳,我非常贊同腰果花經營者的理念「跟著節氣吃當季新鮮小農作物,使用椰子油、橄欖油料理,只用原型食物,長時間低溫烹調,讓食物更美味;不賣加工食品、不用人工添加物。」如果你對於吃進身體裡的食物有意識、且有強烈的感受,海水格格推薦你一定要來品嚐體驗一下,腰果花對天然原型食材的種種尊重,以保留大自然樸實及土地原始生命力的味道,選用在地食材,長時間低溫烹調,讓食物保留原始的美味及營養成份。
原型食材要呈現在饕客面前實在不容易,首先「新鮮」最重要;如果食材不新鮮,必定得添加調味料來提味,那就違反了腰果花的理念了。就是因為食材新鮮,所以盡可能的把自己點的餐點食用完,不要造成浪費,千萬不要有花錢是大爺的想法,點太多東西吃不完,真的是暴殄天物。
在腰果花用餐,一頓飯吃下來,看似吃進許多,全家四個人點了二個餐、一個雙人鍋,附的飯也都吃掉了,海鮮鍋也吃的精光,有飽足感,但身體的感覺是很輕盈的,沒有負擔的感覺,吃進肚子的好能量正在消化中,精神充滿活力。
是的,想要健康,就要選擇原型食物。雖然沒辦法天天吃腰果花,但是如何健康的吃,而吃進健康,是我們每個人都應該要有的觀念!想到自己年紀愈來愈大,代謝愈來愈慢,再不好好愛自己,誰也愛不了你。加上海爸、海媽健康狀況更加要顧,所以在家開伙的飯菜也會愈來愈清淡,但清淡中不失營養。我可以完全接受原型食物,但偶爾還是會受到加工食品的誘惑,我們可以一起來找回健康!
這次在腰果花品嚐了鍋物料理,其中的藜飯留在最後剩下的湯底來做雜炊,這口感真的讓我驚豔,原來藜飯也可以煮成粥,而且口感類似魚卵,吃起來有波波波的口感,搭配煮過海鮮後的鮮甜湯頭,真的好吃!
藜麥的蛋白質很豐富,澱粉質很少,所以幾乎沒有黏性,是個很棒的低GI(升醣指數)好食物,你也來嚐嚐看吧!如果你想吃,又不會煮,可以到腰果花砧板原食料理餐廳來食用,海水格格真心推薦!

▲SOUS低溫烹調的肉,用60度左右的溫度,長時間烹調,微褐化後,鎖住肉汁,細胞膜完整、肉質豐厚,養份完整的被保留。雖然肉切開後看起來還是粉紅色,但它真的已經熟了,這就是低溫烹調的結果,營養不流失,保留原始的美味。
